A Greek-inspired breakfast will change your mornings—don’t miss out!
My Greek friends often joke that the Greek breakfast consists of two main ingredients: coffee and a cigarette. However, I picked up quite a few good ideas of a Greek-style breakfast while travelling around Greece.
I love that every single hotel I stayed in offered fresh tomatoes, cucumbers, olives, and feta cheese at their counter. For me, a small salad made of these components is the most refreshing start of the day, followed by a glass of freshly pressed orange juice. Therefore, I often recreate it at home, especially during the weekend.
On a lazy morning, when I prefer a brunch, something a bit more filling, I will add some eggs to my breakfast. Often, I just make a simple scrambled egg and sprinkle it with oregano and crumbled up feta. If I cook for a larger group of people, I opt for the authentic Greek omeleta. This Greek-style omelette is packed with Mediterranean ingredients, making it super flavourful and a fun twist on the classic omelette. It combines veggies, cheeses, and sometimes meats right into the eggs instead of just being used as toppings.
For the base, I whisk the eggs (adding a little milk or a spoonful of Greek yoghurt for texture) and season it with salt and pepper. I sauté the finely chopped onions, tomato, and sliced bell pepper. Sometimes I add courgette and aubergine as well (this is great if I have leftover veggies). I pour in the eggs and crumble in some feta cheese in for a nice tangy and creamy flavour. Kalamata olives will bring in a salty touch, but I prefer mine on the side as a garnish.
To wrap up the meal on a sweet note, I like to grab some protein-packed Greek yoghurt. I take a small bowl and add a dollop of yoghurt, then sprinkle some nuts over it and finish it off with a drizzle of (ideally Greek) honey. I enjoy adding a splash of lemon juice, but I know it’s not for everyone—so go ahead and tweak it to suit your taste! Why not throw in some fresh berries or a banana with chocolate chips? Sounds delicious!
